Sweet Potato Baby Food Meal Prep
Yield approximately 24- 28 cubes
Ingredients:
3 medium sized sweet potatoes
2 - 3 ice cube trays
3/4 cup warm water
1 tablespoon granulated sugar substitute of your choice (I use Pyure organic)
Directions:
Preheat oven to 375 degrees Fahrenheit. Poke holes all around your sweet potatoes with a fork. Wrap each one in foil and place in the oven for 1 hour and 15 minutes to bake.
Remove and unwrap from foil, allow to cool. Split down the middle and remove the flesh from the sweet potato skin.
Pour into your food processor, add water and sweetener of choice and pulse until a smooth consistency is reached. If you see the potato being "too chunky" feel free to add 1 tablespoon of water at a time until desired consistency is reached.
Pour contents into a large ziploc bag, and snip the corner tip off. Pipe into ice cubes and freeze overnight.
Remove cubes and place into individual ziplocs for easy freezing.
Our feeding at 6 months consists of 2 cubes at a time, so that is how I bag them. It makes for easy reheating, approximately 45 seconds in the microwave and you're set!
