This was an easy appetizer that's been on repeat in our house lately! I usually spend the weekends doing a lot of protein prep for the week, so we end up having a lot of "snack" type meals. This is perfect for any get together or just to have on deck as a great snack!
Here's how I made it:
1 block softened cream cheese (8 oz)
1/2 cup sour cream
24 slices pepperoni
3 slices of cooked bacon
1/3 cup thinly sliced black olives
1/3 cup shredded mozzarella cheese
3 tablespoons minced red onion
3 tablespoon parmesan cheese, separated
1/2 tablespoon garlic powder
1/4 teaspoon pink Himalayan salt
Directions:
Preheat oven to 350 degrees Fahrenheit. Lay out the pepperoni on a parchment lined sheet pan and bake for 7 minutes, or until crisped.
Blot with a paper towel to remove grease and allow to cool.
Chop 6 of the pepperoni slices into bite sized pieces, and set aside the other 18 pieces for dippers.
In a bowl, combine the softened cream cheese, sour cream, salt, garlic powder, diced onion, shredded mozzarella and two tablespoons of the parmesan cheese. Mix well. Add in the DICED pepperoni, bacon crumbles, and black olives. Mix well and roll into a ball shape. Wrap in saran wrap and refrigerate for 3 hours.
Remove and top with the remaining tablespoon of parmesan cheese. Add additional olives on top if desired.
Serve with the pepperoni chips and cheese crackers like ParmCrisps!
