Ingredients:
32 oz unsweetened plain Greek Yogurt (I usually buy the 5%)
1/2 cup granulated sweetener of your choice (I use Pyure)
2 teaspoons fresh lemon juice
64 fresh raspberries (this allots for 4 per pop, you can use less if you like)
1/2 cup dark chocolate ChocZero chips (purchase link below and discount code)
(yields 16 pops using the mold below)
Directions:
Using the silicone mold (purchase HERE) Insert the wooden sticks first and lay your molds on a sheet pan or flat surface that you can easily place in your freezer.
In a bowl, combine the yogurt, sweetener, and lemon juice.
The easiest way to fill the molds I found was by adding the yogurt into a large ziploc bag, and snipping the tip off to essentially utilize it as a pastry bag.
Per mold take 2 raspberries and "smush" them with your fingers. Place them on opposite ends of the mold. Sprinkle about 4 chocolate chips in. Repeat this with all of your molds. Now fill the molds half way with the yogurt mixture. Tap the molds on the flat surface to "level" out the yogurt filling. Add the remaining 2 raspberries per pop at this time, leaving them whole. Repeat with all molds. Fill them with the remaining yogurt, tapping as you go along to even out the molds. Top with additional chocolate chips.
Freeze overnight and store in a large ziploc bag.
Try other fillings too!
We did another batch with blueberries and ChocZero white chocolate chips, another one where we added banana extract to the yogurt and had chocolate chips so they were like banana chip popsicles! Get creative and enjoy!
