Low Carb Berry Jam

Making your own jam that isn't full of crazy preservatives and excess sugar is so easy!

I'm not talking about boiling fruit for hours and canning either. You just need a few simple ingredients, and a little patience to allow the jam to firm up.



Ingredients:

1 pound frozen berries of your choice (strawberry, blackberry, blueberry, raspberry or a combo)

1/2 cup water

1/3 cup granulated sweetener of your choice (to taste, you can add more if needed, I use Pyure)

2 tablespoons lemon juice

zest from one lemon

1 tablespoon unflavored gelatin (find my favorite here )


Directions:

In a medium sized pot over medium-high heat, add in the berries and water. Bring to a boil. Add in the sweetener, lemon juice, and lemon zest. Continue to boil for 2 minutes. Reduce heat to medium low and keep cooking for approximately 20 minutes. Remove from heat and taste test. If you need more sweetener, add it now. Stir in the gelatin. Allow to cool for approximately 10 minutes. If the jam is too "chunky" for your liking, you can remove half and blend it and add it back in to the cooked berries and stir.

Store in a 16 oz glass jar up to 10 days in the refrigerator.
