Ingredients:
2 cups almond flour
2 tablespoon baking powder
1/2 cup granulated sweetener of your choice (I used Pyure)
1 tablespoon unflavored gelatin (I use this brand HERE)
1 cup roughly chopped walnuts
8 oz room temperature cream cheese
3 eggs, whisked
Topping (not necessary, but brings this faux-nana bread to the next level!)
1/2 cup walnuts, chopped
2 tablespoon almond flour
2 tablespoon granulated sweetener of your choice (I used Pyure)
2 tablespoons melted butter
Directions:
Preheat oven to 350 degrees Fahrenheit.
Line a standard size loaf pan with parchment paper and spray with cooking spray
In a large bowl, combine the dry ingredients for the bread, and add in the cream cheese, eggs, and emulsion. Mix together well and pour into the greased and lined loaf pan.
In a small bowl, combine the topping ingredients together and carefully sprinkle over the top of the banana bread batter. Press down carefully into the dough.
Bake for 35-40 minutes, or until a toothpick inserted comes out clean.
Serve with homemade whipped cream and sugar free caramel sauce!
