Homemade Alfredo Sauce (Keto, LowCarb)




Ingredients:

1 cup unsalted butter

1/2 medium yellow onion, finely diced

3 cloves fresh garlic, minced

1/4 cup Parmesan cheese, grated (or powdered from bottle is fine too)

6 oz room temperature cream cheese

3/4 cup heavy whipping cream

1/4 teaspoon pink Himalayan salt

1/2 teaspoon black pepper

1/3 cup bone broth or chicken stock

1 teaspoon xantan gum (optional, but helps to thicken it)


Directions:

Melt the butter over medium low heat and add in the onions and garlic. Cook them down until they begin to become translucent. Add in the softened cream cheese, heavy cream, and Parmesan cheese. Stir until incorporated, being mindful of the heat. Add in the salt and pepper and stir well. Transfer to a food processor, and stream in the broth (or chicken stock) while blending. Blend for 30 seconds or until well combined. Transfer back to the pot and whisk in the xanthan gum. Cook for approximately 5 more minutes over medium low or until warm.

Serve immediately.


Serves approximately 6-8 guests
