Ingredients:
2 cans unsweetened coconut cream (13.66 oz size)
2 tablespoons unflavored powdered gelatin (I use this brand HERE)
2 teaspoons strawberry extract (or you can use any flavor, vanilla is a neutral base if you prefer)
1/2 cup powdered Monkfruit sweetener
Berries for garnish

Directions:
Combine coconut cream and monkfruit in a medium sized sauce pan over medium heat. Continuously stir for approximately 6-8 minutes, you want the liquid to be fairly hot (not boiling) Remove from heat and whisk in the gelatin and extract flavoring.
Pour immediately into greased ramekins, refrigerate for a minimum of 6 hours or overnight. Top with berries and Strawberry choczero syrup
