Springtime is here and I'm loving all of the fresh produce! I love having great and easy salad ideas. Especially because it warms up SO FAST here in Florida. One of my favorite ways to make easy evening meals without heating up the house is to do a lot of protein prep on one day, then make assorted large salads to have for dinner!

Steak Bites with Creamy Dill Dressing
Prep steak ahead of time to use in salads! You can buy cheaper cuts for this idea. When seasoned well, they are the perfect protein to add into a salad. Plus you can eat it cold straight from the fridge!
6 cups spring mix
1 medium red onion, thinly sliced
1 medium cucumber, sliced thin
8 radishes, sliced in half
1 pound cube steak, browned and seasoned with pink himalayan salt and black pepper
4 tablespoons roasted sesame seeds
Arrange spring mix evenly amongst four bowls, top with remaining ingredients and drizzle steak with creamy dill dressing
Dairy Free Dill Dressing
1 cup mayonnaise
1/2 cup apple cider vinegar
2 teaspoons pink Himalayan salt
2 tablespoons garlic powder
1/3 cup chopped red onion
1/4 cup fresh dill
1 teaspoon black pepper
Combine all dressing ingredients in food processor and combine. Store in a glass jar covered up to 5 days.

Meditteranean Salmon Power Bowl
Mediterranean Salmon Power Bowl
Serves 4
1 pound salmon- split into 4 serving sizes
4 tablespoons lemon and pepper seasoning
1 medium cucumber, sliced
1 cup pickled cauliflower
1/2 cup kalamata olives
4 wedges brie cheees
1 cup oyster mushrooms- sauteed in olive oil until brown
1/2 cup sliced almonds
4 cups spring mix
Coat salmon in the lemon pepper seasoning. Bake in your airfryer for 12 minutes at 400 degrees.
Evenly distribute spring mix among 4 salad bowls and top with salmon. Arrange cucumbers, olives, mushrooms, cauliflower, brie cheese, and almonds around plate.
Drizzle salmon with creamy lime dressing and enjoy.
Cilantro Lime Dressing 1 cup diced cilantro 1/2 cup sour cream 1/2 cup Greek yogurt 1/4 cup lime juice 2 tablespoons apple cider vinegar 1 jalapeno, seeded and deveined 2 teaspoons pink Himalayan salt 1/2 teaspoon black pepper 1/2 teaspoon smoked paprika 1/2 teaspoon dried basil 2 tablespoons unsweetened plain almond milk

Serves 4
8 cups spring mix
1/2 cup sliced manzanilla olives
16 small bell peppers
16 cherry tomatoes, sliced in half
2 avocados
2 pounds ground beef, cooked and seasoned to your liking
Pork rinds (optional)
Spicy pickled chili peppers (optional)
Roast mini bell peppers over flame using tongs, approximately 2 minutes on each side. Set aside. Toss spring mix with olives and cilantro lime dressing. Plate in middle and surround with tomatoes, avocado, mini bell peppers, tomatoes, beef, pork rinds, and chili peppers and enjoy!
