Dairy Free Creamed Spinach- Keto & LowCarb




Creamed spinach is a favorite side in our house! I make a mean one, if I do say so myself. But as I was trying to cut back on dairy and craving this dish it definitely lead me to do a bit of experimenting.


I was super happy with the outcome of this, and no one in the fam even knew it was dairy free!

Ingredients:

2 tablespoons bacon grease (or olive oil)

24 oz frozen spinach

1 medium yellow onion, diced

2 tablespoons fresh garlic, minced

1 tablespoon onion powder

1/2 teaspoon pink Himalayan salt

1/2 teaspoon cracked black pepper

1-1/2 cups mayonnaise

3/4 cup chicken broth

2 egg yolks

3 tablespoons nutritional yeast


Directions:

In a large pot over medium heat, melt your bacon grease. Add in your diced onions and minced garlic. Cook down for approximately 5 minutes. Add in your frozen spinach, cover the pot with a lid.

In a food processor, combine the mayonnaise, chicken broth, egg yolks, and nutritional yeast. Blend for 1 minute to combine well, set aside.

Add in your seasonings to the spinach and onion mixture. Stir very well. Continue to cook down for approximately 10 more minutes. Pour the mayo mixture over the spinach and mix thoroughly.

Cover with a lid and reduce heat to medium low. Cook for 20 minutes, paying attention to stir as needed.

Serve hot and enjoy!
