Ingredients:
3 pounds pork chorizo
1 medium daikon radish
1 tablespoon olive oil
1/2 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon pink Himalayan salt
4 large eggs
Directions:
Preheat oven to 350 degrees Fahrenheit.
Peel and dice the daikon into 1/2" cubes. Sautee in a large pan over medium heat for about 10 minutes. Drain off any excess water. Spread daikon out onto a parchment lined sheet pan. Sprinkle evenly with the garlic powder, salt, and pepper
Line a sheet pan with parchment paper and press out the chorizo thinly across the pan.
Bake both for 25 minutes.
Remove and allow to slightly cool.
Using a glass 7x11 baking dish add in the chorizo and daikon together and mix very well. Make 4 "dips" with the back end of a spoon and crack one egg into each.
Bake for 30 minutes for over medium eggs (longer or shorter based on your egg preference)
Serve hot and enjoy!
