Chocolate Chip Cookie Dough (Dairy Free, Egg Free)


Here's a super simple dairy free edible cookie dough recipe!

These bites are perfect to keep on hand for a little evening dessert!

My son just asked for a chocolate chip cookie dough ice cream to be made with these, so you can guess what will be coming at you next! Ha!

The base of these would be fun to mix up, try adding in some spices and pecans to make it a pecan sandy cookie dough bite!



Ingredients:

2 cups almond flour

1/2 cup and 3 tablespoons POWDERED brown sugar substitute (I used Lakanto golden) - see instructions below on how to make this

1-1/4 tablespoons vanilla extract

1/2 cup and 1 tablespoon coconut manna, melted

1/2 cup almond butter, fluid

1/2 tablespoon unflavored gelatin

1 cup sugar free dark chocolate chips (dairy free)


In a food processor, blend the brown sugar substiute until it resembles powdered sugar. This takes about a minute and a half.

Add in your almond flour and blend briefly.

Run the food processor, and stream in the melted coconut manna, vanilla extract, gelatin, and almond butter. You may need to stop and scrape the sides down.

The mixture should resemble wet sand.

Remove dough and place in a bowl. Fold in the chocolate chips.


Directions:

Using a 1 oz cookie scoop, scoop out balls onto parchment paper.

Place in the freezer for 20 minutes.


Keep leftovers refrigerated.



Recipe yielded 25 cookie dough 1 oz balls
