Serves approximately 6-8
Ingredients:
4 medium size steaks of your choice, sliced thin (I had T-Bones)
2 medium yellow onions
6 cloves fresh garlic
10 small portobello mushrooms
4 leaves fresh basil
3 tablespoons olive oil , separated
1/2 tablespoon kosher salt
1 tablespoon cajun seasoning of your choice (I use Slap Ya Mama brand)
1 tablespoon black pepper
1/2 tablespoon garlic powder
5 oz crumbled Bleu or Gorgonzola cheese
Directions:
Preheat oven to 350 degrees Fahrenheit. Using a sheet pan, line it with parchment paper. Peel and slice the onions into 1/4" size rings and slice the mushrooms into quarters. Spread out one tablespoon of the olive oil on the parchment paper. Top with the mushrooms and onions evenly. Lay the steak slices over top. Drizzle with the remaining two tablespoons of olive oil.
Evenly distribute the seasonings over the top of the meat and veggies and rub in.
Bake for 20 minutes, cover with foil and bake an additional 10 minutes. If you want the steak bits "crispy" pop under the broiler on low for 2-3 minutes, being careful not to burn your onions.
Serve topped with the crumbled bleu cheese and diced basil.
