I love zucchini but I had honestly gotten tired of the texture cooking it in all of my "usual" ways!
So I tried this way out, crisping them up in the airfryer and WOW! Totally made such an amazing side dish! Check out the super easy recipe below
Ingredients:
3 medium sized zucchini, washed and dried
1 tablespoon pink Himalayan salt
1 teaspoon coase ground black pepper
1 tablespoon melted bacon grease
3 pieces cooked bacon, cooled and diced
Directions:
Slice the ends off of the zucchini on a cutting board. Next cut it in half vertically. Then cut down the middle of the "vertical" pieces and form wedges.
Slice those wedges in half to resemble little "spears"
Lay them out on a paper towel and sprinkle 2 teaspoons of the salt over them and allow them to sit and pull out the excess water for approximately 20 minutes.
Line your airfryer with foil.
Dab the zucchini with paper towels to remove any excess water. Toss all zucchini wedges in a large bowl, pour over the melted bacon grease, toss in the seasonings and coat evenly.
Lay them out with the skin side down and roast for 10 minutes in your airfryer at 350 degrees.
Remove and top with the diced bacon and enjoy!
